
Fruit Dessert
This delicious dessert is made with fresh blueberries and vanilla skyr. 💜
Steaming the cake instead of baking it in the oven helps keep your home cool : steam heats the surrounding air less, which prevents the kitchen from overheating on hot days. It’s a light, fruity dessert, best enjoyed chilled during the summer season ! I was inspired by a recipe I discovered on the Bake Only Youtube Chanel.
Ingredients
- 1 cup – 8.5 oz (250 g) vanilla Skyr
- 3/4 cup (120 g) fresh blueberries
- 2 eggs
- 3 tbsp cornstarch
- 1 tbsp liquid vanilla extract
- 2 tbsp granulated sugar

Rinse the blueberries and pat them dry with a towel.
Step 1 : The batter
- In a mixing bowl, whisk together 1 cup vanilla Skyr, 2 eggs, and 2 tbsp granulated sugar. Add 3 tbsp cornstarch and mix until the batter is smooth.
- Gently fold in the blueberries, reserving a few for the topping.
Step 2 : Cooking
- Crumple a sheet of parchment paper and place it at the bottom of a cake pan about 6 inches (16 cm) in diameter.
Pour the batter into the pan and scatter the remaining blueberries on top. - Pour some water into a pressure cooker, place the steamer basket inside, then set the cake tin in the basket. Cover the tin with a small lid to protect it from water droplets.Steam for 35 minutes, starting once the pressure cooker begins to whistle.

Step 3 : Chilling
Once the cake has cooled, cover the pan with plastic wrap and refrigerate for 2 hours.
Carefully unmold before serving.

- Skyr can be replaced with vanilla yogurt.
- Adjust the amount of sugar depending on how sweet your skyr or vanilla yogurt is.
