Mini cakes for Valentine’s Day
If you’re looking for a unique recipe for Valentine’s Day, give these heart-shaped cakes with red beet a try. They are sweet and incredibly moist. 💗
Don’t tell your sweetheart right away that you’ve added red beetroot to the recipe. After you’ve enjoyed the dessert, you can ask them about the ingredients you used to make the heart-shaped cupcakes! 😁
Ingredients
- 2/3 cup (80 g) white spelt flour or all-purpose flour
- 2 tbsp (30 g) brown sugar
- 1/3 cup ~ 3 oz (80 g) canned red beets
- 2 tablespoons ~ (30 ml) grapeseed oil
- 1/4 cup (60 g) natural sheep’s or goat’s milk yogurt
- 1 egg
- 1/2 tsp (4 g) baking powder
Preheat the oven to 350 degrees Fahrenheit (180 degrees Celsius).
Step 1 : The batter
- Rinse the beet cubes under cold water.
- In a small blender, combine the goat’s milk yogurt and red beet.
- Transfer to a mixing bowl, making sure there are no small pieces of unmixed beet left. 😆
- Add the egg, sunflower oil, and brown sugar. Whisk the ingredients with a fork. Incorporate the flour and baking powder, mix well.
Step 2 : Baking
- Pour the batter into a buttered and floured square baking pan , approximately 7 x 7 inches.
- Grease the inside of a heart cookie cutter with butter and dust it with flour. This will make it easier to remove after baking. Then press it into the batter in the center of the pan.
- Bake for 20 minutes at 350 degrees Fahrenheit (180 degrees Celsius), convection heat on the second level.
Step 3 : The Hearts
- Allow your cake to cool slightly, then remove it from the pan onto a flat surface.
- Carefully remove the heart in the center.
- Using a smaller heart-shaped cookie cutter, press it into each corner of the cake to create four lovely hearts.
The remaining cake can be cut into cubes, enjoy them as a snack before your Valentine arrives! 😉😍
