Recipe with Fresh Strawberry

These moist little cakes filled with juicy strawberries are simple to make. You can enjoy them for any occasion, whether it’s a snack for the kids or a light dessert after a meal. 🍓

I opted for French “Gariguette” strawberries as their slender and elongated shapes work wonderfully well for this recipe.

Ingredients

 

  • Âľ cup ~3.5 oz (100 g) all-purpose flour
  • 1 egg
  • ½ tsp (4 g) baking powder
  • ÂĽ cup (40 g) sugar
  • ½ cup ~3.5 oz (100 g) plain yogurt
  • 3 tbsp ~1.35 fl oz (40 ml) vegetable oil
  • 3 tbsp ~1.35 fl oz (40 ml) water
  • 6 “gariguette” strawberries

Preheat the oven to 350 degrees Fahrenheit (180 degrees Celsius).

Step 1 : Strawberries
  1. Wash the strawberries and remove the hulls.
  2. Gently pat them dry with a paper towel.
Step 2 : Batter
  1. In a mixing bowl, combine the following ingredients one by one: 1 egg, 1/4 cup (40 g) sugar, 1/2 cup (100 g) of plain yogurt, 3 tablespoons (40 ml) of neutral-tasting vegetable oil, and 3 tablespoons (40 ml) of water.
  2. Incorporate 3/4 cup (100 g) of flour and 1/2 teaspoon (4 g) of baking powder.
Step 3 : Shaping the Muffins
  1. Spoon 2 tablespoons of batter into each muffin cup.
  2. Place a whole strawberry in the center of the batter, with the hulled side facing downwards. Gently press it into the batter, ensuring that a portion of the strawberry remains visible (refer to the photo below).

Step 4: Baking

Bake in the preheated oven at 350 degrees Fahrenheit (180 degrees Celsius) for 15 minutes, using the fan-forced setting on the middle rack.

Allow the strawberry muffins to cool before removing them from the molds, or they might break apart!

  • When washing strawberries, it’s important to keep the stems intact. This prevents the strawberries from absorbing water. If you remove the stems before washing, water can seep into the strawberries and make them soggy.
  • Strawberries are not only low in calories but also lightly sweet. They are packed with vitamins A and C, as well as beneficial minerals like magnesium and calcium.
