Christmas Cookies
These tree-shaped cookies create a festive Christmas atmosphere. They are coated with snowflake-shaped coconut powder. Kids and parents can have fun making these little cookies together during the holiday season! 🎄
Ingredients for 20 cookies
For the dough
- 1 cup (110 g) all-purpose flour
- 1/3 cup (50 g) coconut flour
- 2 egg yolks
- 1/3 cup – 2 ½ fl oz (80 ml) vegetable oil grapeseed or canola
- 1,5 fl oz ~ 1/8 cup + 1 tbsp (40 ml) water
- ¼ cup (50 g) cane sugar
- ½ teaspoon baking powder
For the decoration
- Liquid Honey
- Shredded Coconut
Step 1 : Dough
In a mixing bowl, combine the all-purpose flour, coconut flour, brown sugar, and half a teaspoon of baking powder. Make a well in the center and add the egg yolks, vegetable oil, and water. Mix until a dough ball forms.
Preheat the oven to 350 degrees Fahrenheit (180 degrees Celsius).
Step 2 : Cookies
The dough will be crumbly. Gently roll it out on a floured surface or a silicone baking mat. Use a Christmas tree-shaped cookie cutter to form the cookies. Place them on a baking sheet lined with parchment paper.
Step 3 : Baking
Bake the cookies on the middle rack at 350 degrees Fahrenheit for about 13 minutes. Keep an eye on them towards the end of baking: the edges should turn slightly golden brown. Allow the little trees to cool after baking.
Step 4 : Decoration
Once the cookies have cooled, pour some coconut powder onto a small plate. Apply a small dollop of honey in the center of each tree and spread it evenly over the surface using a pastry brush. Press the honey-coated surface gently into the coconut powder, swirling the cookie to distribute the powder all over the tree.
Gisou’s Tips and Tricks
- Coconut flour makes the dough very crumbly: you need to roll it out gently, turning the rolling pin in different directions.
- You can vary the shapes of the Christmas cookies with stars, reindeers, and more.
- I tried chilling the dough in the refrigerator for 30 minutes to make it easier to roll, but it didn’t turn out well! The dough became very hard and “broke” when I tried to roll it out!
