Christmas Cake
This soft and aromatic cake with a hint of clementine flavor can be a delightful replacement for the traditional Yule log during your Christmas feast. I took inspiration from a recipe I discovered on the Italian YouTube channel “Ricette dolci“. 🎄
With a touch of powdered sugar and a few decorative elements, the cake magically transforms into a festive Christmas wreath.

Ingredients
- 1 ⅔ cups (200 g) all-purpose flour
- 3 organic clementines
- 2 eggs
- 1/3 cup (65 g) cane sugar
- 1/2 cup (100 g) natural sheep’s or goat’s milk yogurt (or regular)
- 1/3 cup ~ 2,5 fl oz (90 ml) neutral tasting oil, such as grapeseed or canola
- 3 teaspoons baking powder
Step 1 : Clementines
- Peel and cut one clementine into several pieces.
- Thoroughly wash the other two clementines and also cut them into pieces while keeping the peel intact.
- Remember to remove any seeds you find.
- Place the clementines in your food processor bowl fitted with the blending blade.
Preheat the oven to 350 degrees Fahrenheit (180 degrees Celsius).
Step 2 : Cake
- Add the eggs, sugar, yogurt, oil, and a pinch of salt. Blend for 2 minutes.
- Place a large sieve over a bowl and pour the mixture, stirring with a spatula to strain it.
- Once only the “lumps” remain, remove the sieve and add the flour and baking powder.
- Whisk until you get a smooth mixture.
Step 3 : Baking
- Butter and flour a bundt pan. Alternatively, you can use a 22-centimeter (8,7-inch) diameter mold and in the center, place a small glass or cup coated with butter and flour to create the “hole” of the wreath.
- Pour the batter into the mold.
- Bake for 20 minutes at 350 degrees Fahrenheit (180 degrees Celsius), using the convection setting on the third rack level.
Unmold the cake onto a plate and decorate it with powdered sugar and small chocolates after it has cooled.
