Avocado Cream Base
I was looking for a unique idea for Valentine’s Day and fell in love with the picture of the “chocolate avocado pancake cake” I found it on the “Sweet and Sour” website. 💘
However, I decided to use the presentation idea of the cake and instead used the recipe for “almond little crepes” while Vany’s “avocado chocolate mousse” serves as the ganache.
This delightful little cake is perfect for a romantic evening!

Ingredients
For approximately 15 small crepes
- 1 cup (125 g) white spelt flour or all-purpose flour
- 9,5 oz ~ 1 cup + 2 tablespoons (270 g) of almond milk
- 1 egg
- 1 teaspoon vegetable oil (such as grapeseed)
For the chocolate cream
- 2 mediums (180 g) ripe avocats
- 2 fl oz ~ 4 tablespoons (60 g) liquid honey
- 2,3 fl oz (65 g) coconut milk
- 1,5 oz (45 g) dark chocolate
- 1 tablespoon (30 g) unsweetened cocoa powder
- 1 teaspoon liquid vanilla extract
For decoration
- A few berries
Step 1 : Crepes
- Place all the ingredients (flour, almond milk, egg, and vegetable oil) in a bowl.
- Whisk together until well combined.
- Cover the bowl with a towel and let the batter rest for about an hour.
- It should have the consistency of liquid cream. Add a little more milk if needed.
- Cook the crepes on a multi-pan griddle.
Step 2 : Chocolate cream
- Melt the chocolate using a double boiler.
- Peel and dice the avocados, then place them in a blender.
- Add the honey, coconut milk, melted chocolate, cocoa powder, and liquid vanilla extract to the blender. Blend the ingredients multiple times, scraping down the sides as necessary, until you achieve a smooth cream.
Step 3 : Assembling the chocolate cake
- Place the first pancake on a small plate.
- Spread a layer of chocolate cream on the crepes.
- Add another pancake on top and spread another layer of cream.
- Repeat the process to stack about fifteen pancakes.
- On the final layer of cream, decorate with raspberries and red currants.

Gisou’s Tips and Tricks
- I initially tried making the ganache with Emilie’s recipe, which used only two ingredients (avocado and dark chocolate). However, my husband and I found that the avocado flavor was too strong. Then, I found Vany’s recipe, and we absolutely loved it!
- Avocado provides a significant amount of vitamins (A, B, C, E, K) and various minerals (potassium, phosphorus, iron, etc.).
- When purchasing avocados, they are often quite firm and take several days to ripen. To expedite the ripening process, avoid refrigerating them. Instead, store them at room temperature or wrap them in newspaper.
