Christmas Treast
Christmas wouldn’t be complete without truffles! Add these candies to your collection of festive recipes. In this recipe, chestnut cream softens the chocolate. 🎄
I was inspired by the “chocolate chestnut truffles” recipe that I saw on the “Marmiton” website.
Ingrédients
- 5,3 oz ~ 1/2 cup (150 g) vanilla chestnuts cream
- 2,5 oz (80 g) semi-sweet chocolate bar
- ¼ cup ~ 4 tablespoons (50 g) butter
- 2 Teaspoons (about 10 g) unsweetened cocoa powder
Step 1 : Chestnut-Chocolate Mixture
- Melt the butter in a small saucepan over a double boiler.
- Break the chocolate into pieces and add it to the melted butter. Mix the two ingredients together.
- Once the chocolate has melted, remove from heat and add the chestnut cream.
- Whisk until the mixture is smooth and well combined.
- Allow the mixture to cool, then cover it with plastic wrap.
- Place the saucepan in the refrigerator for two to three hours.
Step 2 : Shaping the Truffles
- Prepare a small plate with cocoa powder.
- Using a teaspoon, take a small portion of the chestnut-chocolate mixture and roll it into small balls between your hands. Then roll the balls in the cocoa powder.
- Place the truffles on a container, spacing them apart, and close the container with a lid.
- Let the chestnut-chocolate truffles rest in the refrigerator for approximately 4 hours before enjoying them.

Gisou’s tips and tricks
- To fully bring out the flavor of the chestnut cream, it’s best not to use dark chocolate with more than 52% cocoa.
- During Step 1, the chestnut-chocolate dough should not stay in the refrigerator for more than three hours, as it will become too hard to shape into balls.
- Store the truffles in a closed container in the refrigerator.
- Nowadays, it is often obtained through a long kneading process of chestnuts and may not necessarily contain candied chestnuts.
