A chocolate cake recipe that only requires 3 ingredients : dark chocolate, coconut milk, and rolled oats… but don’t worry, it tastes amazing! It has been approved by my daughter and husband, who are both big foodies! 😃
And the best part is, it doesn’t require any baking. I discovered this recipe by David Davidov on YouTube.

Ingredients

 

  • 6.5 oz (170 g) semi-sweet chocolate
  • 1 ½ cups + 2 tbsp ~ 13 fl oz (400 ml) coconut milk
  • 2 ½ cups ~7.8 oz (220 g) rolled oats

 

 

  1. Line a square cake pan  approximately of 6.69 x 6.69 inches (17 x 17 cm) or you can also use a round pan of 7.08 inches (18 cm in diameter) with parchment paper. Lightly brush it with some vegetable oil using a brush. This will make it easier to remove the cake from the pan later.
  2. Chop the chocolate into pieces and put it in a saucepan.
  3. Add 13 fl oz (400 ml) of coconut milk.
  4. Heat over medium heat and stir to melt the chocolate.
  5. Once the chocolate has melted completely, remove from the heat.
  6. Add the rolled oats and mix well.
  7. Pour the mixture into the pan.
  8. Let it cool at room temperature.
  9. Cover with plastic wrap and refrigerate for at least 5 hours.

When serving, you can decorate it with red fruits and powdered sugar.

Gisou’s Tips and Tricks

  • For a sweeter flavor, you can add one to two tablespoons of sugar to the coconut milk along with the chocolate pieces.
  • And if you want to keep it light, you can replace regular sugar with a sweetener. Since there is no baking involved, the sweet flavor will still be prominent.
