tarte poisson d'avril au st moret et saumon 2022

Recipe with Philadelphia and Smoked Salmon

A fun pie to celebrate the tradition of April 1st, a day of jokes and pranks. On this day, we also attach a little fish 🐠 to the back of people we want to trick.
But this one, we place directly on the table to enjoy with the family. 😊

Step 1 : The Crust
  1. Preheat the oven to 350 degrees Fahrenheit (180 degrees Celsius).
  2. In a bowl , mix 1 ½ cups of flour with the baking powder. Then add 1/3 cup of grape seed oil and 1/3 cup of lukewarm water. Knead to obtain a dough ball.
Flour your work surface. I use a silicone pastry mat to roll out my dough.
  3. Grease and sprinkle flour on an oval baking dish measuring 8.66 x 6.30 inches (22 x 16 cm), then place the dough in it.
To prevent the crust from puffing up during baking, add dry white beans or baking beads on top.
  4. Bake at to 350 degrees Fahrenheit (180 degrees Celsius), using the convection setting, for 25 minutes on the bottom rack.
  5. After baking, let the pie cool and remove the white beans.
Step 2 : Shaping
  1. Pour the Philadelphia Original into a small bowl and stir vigorously with a fork to make it creamy. Coat the entire fish with the cheese. Then smooth the surface with a silicone spatula.
  2. Cut a triangle to make the fish’s mouth. Place it opposite the mouth to represent the fish’s tail.
  3. Slice the smoked salmon into long, thin strips and place them on the cheese to form the fish’s scales.
  4. Unroll the crab sticks and place them on the edges of the crust, alternating the colors (white and orange). You can use the remaining Philadelphia Original to stick the crab stick to the crust.
  5. And to finish the decoration, place a black olive as the fish’s eye and add a few crab stick rounds to represent bubbles!

Gisou’s Tips and Tricks

  • This pie is quick and easy to prepare because the dough does not need to rest.
  • If you don’t have an oval pan, you can use a round pan with a diameter of approximately 13 inches (33 cm) for baking.
